Why it matters

How is a real NFPA 96 cleaning different from a quick hood wipe-down?

A wipe-down cleans only the visible hood and leaves grease in the plenum, ductwork, and rooftop fan, which is exactly where fires start and spread. A true NFPA 96 cleaning takes the entire system down to bare metal, hood through fan, and documents it. That is the difference between looking clean and being compliant.

Do you clean the ductwork and rooftop fan too, or just the hood?

The whole system. We clean the hood, grease filters, plenum, grease trough, ventilation, and the rooftop exhaust fan, and we service and stamp the access doors along the way. Grease left in the duct and fan is the number one cause of kitchen exhaust fires.

What documentation do I get after the cleaning?

A certification sticker is installed on each hood system we service, and we leave an After Service Report for your records. All certifications and documentation can be submitted directly to your property management, your insurance provider, and your local Authority Having Jurisdiction for their record keeping.

Do we have to close the kitchen while you clean?

No. All of our work is done during your non-operating hours, overnight, so you open the next day ready to cook. We cover your kitchen equipment before we start and wipe it down when we finish.

What happens to all the grease and waste water?

We form a funnel from the hood to direct water flow into a collection source, and all contaminated water is collected and disposed of according to the EPA's requirements. Nothing goes down your drains or onto your roof.
